Prosecco Extra Dry ($15)

Even though they’re based in Friuili, Borgo delle Rose also make Prosecco, including a rosé. This Prosecco has notable sugar and is a very standard example of medium-dry Prosecco: fruity and easy.

Ribolla Gialla Sparkling Brut ($15)

Quite an unusual wine: sparkling Ribolla Gialla made using the tank method and aged in the bottle for just three months. Dry, fresh, but quite neutral in its aromatics.
