about located in Tours-sur-Marne, a Grand Cru in Montagne de Reims, with plantings in Bouzy and Billy-le-Grand. The family have been in the village since the eighteenth century and worked as farmers before Pierre Amiable began to make wine after the Second World War. His son, Jean-Pierre, developed production further and now the winery is run by Ophelie and her husband Arnaud. Although this is Pinot Noir territory, Chardonnay also features prominently in their blends (Billy-le-Grand is particularly known for Chardonnay).

“Antares” Premier Cru Brut 2020 ($45)
80% Pinot Noir, 20% Chardonnay. The name cames from a star in the Scorpion constellation; the wine comes from Billy le Grand. Spends about two a half years on the lees. An interesting, inviting combination of bright, just-ripe stone fruits and a lean, acid-driven palate rounded out by a spicy, toast lees texture.
