about Dominique Gruhier is based in the village of Epineuil, just north of Chablis and its own appellation. All his vines are Pinot Noir, unusual for this part of Burgundy, and he makes two Crémants, white and rosé. He is a winemaker who has had many setbacks since the early 1990s when he started out, natural, technical, and bureaucratic, but he has soldiered on to make wines emblematic of the little-known appellation.

100% Pinot Noir. 6g/l dosage. A little bit stinky and earthy—Gruhier has flirted with natural wines in the past—with high acid balancing the dosage which gives the wine a lightly creamy richness.
