standout good quality sparkling wine from Denmark’s first licensed winery

about it’s cold in Denmark which potentially makes it ideal for sparkling wine, though it’s still a struggle to get the grapes fully ripe. Sven Moesgaard founded the winery in the small village of Dons, and the region has been been given a PDO designation because of him, making it the furthest north in Europe.

DONS Rosé Brut 2018 ($50)

The cool climate means that the hybrid Rondo is used as well as the early-ripening Pinot Noir Précose. Ten months lees ageing. An excellent if expensive wine.
