He and his wife became increasingly excited by the potential for sparkling wine in England and bought land in Oxfordshire (hundred hills is an old form of measurement in England). The chalk soils are very similar to those of Côte des Blancs; analysis through the CIVC convinced them that this was the ideal property.

48 months on the lees for a powerful style balanced by lean acidity. Mature, developed style very typical of English sparkling wine, with a spicy edge.
