about founded by Hugo Stewart in Wiltshire, with Daniel Ham the winemaker. Stewart comes from a pig and cereal farming family; he also started a biodynamic winery in Languedoc. He returned to England to establish sparkling wine production, with a very different farming approach from when he had grown up. The three wines come from thin, chalky soils.

Traditional Method Sparkling Hugo 2021 (£60)

A blend of Chardonnay, Pinot Noir, Meunier, and Pinot Gris, with some reserve wines added. Fermented in barrels and amphorae. Style is more on the oxidative side, quite rich, round, and powerful despite alcohol of 11%. Quite distinctive, an alternative expression of English sparkling wine.
