about The Gimonnet family has been growing grapes in Champagne since 1750, but the current winemaking director, Didier Gimonnet, is only the second generation to bottle wine—his father Pierre started in 1935. Gimonnet is based in the Premier Cru village of Cuis, and there are also holdings in the Grand Cru villages of Cramant, Chouilly, Oger, Vertus, and Aÿ, with a total of 28ha of plantings, all in the heart of Côte des Blancs.

Brut Extra Premier Cru NV ($60)

70% of the wine comes from the Premier Cru village of Cuis, where Gimmonet is based. The wines are sometimes considered to be a bit too neutral and acidic, even for Champagne, so Gimonnet emphasize the importance of blending to produce a more balanced, expressive wine, with 70% of the wine from the 2016 vintage and 30% from 2012 to 2015 and four years of bottle ageing to give the wine more depth and complexity.
