about Laetitia Billiot is the fourth-generation winemaker. Her great-grandfather Louis was the first to bottle wine, followed by her grandfather Henri and her son Serge who took over in 1954. Only 5ha are owned with 18 separate parcels, mostly in Ambonnay on the mid-slopes. None of the wines goes through malolactic fermentation. The style of wine is site-driven and vinous.

Réserve Burt NV ($60)

75% Pinot Noir, 25% Chardonnay, from fifty-year-old vines. Multi-vintage: 50% 2021; 50% 2019 and 2020. Aged for three years. This a perfect example of how non-vintage wines can be superb expressions of Champagne: particular, defined, elegant, generously fruity while maintaining vibrant acidity.

Millésime Brut Ambonnay Grand Cru 2018 ($90)

80% Pinot Noir, 20% Chardonnay, all Ambonnay fruit from limestone, clay, chalk soils. 48 months ageing, with a small amount of dosage (5g/l). This is a serious wine with depth, body, and maturity. It’s not as immediately drinkable as the non-vintage; instead, it’s a wine to be drunk with food. Superb.
