standout first producer of Brut Nature in cava
about viticultural history dating back to 1312, the first cava made in 1928. In all that time, the family has always been bsaed in Sant Sadurní d’Anoia. The first Brut Nature in cava was released in 1948—originally also known as Triple Sec, as it was very, very, very dry in comparison to contemporary wines (it’s a good job that name didn’t stick as it would be very confusing). In 1960, Mestres became one of the first producers to put cava on the label.

“Visol” Brut Nature 2016 ($27)
Traditional Cava blend, the base wines aged for six months in a combination of stainless steel and used chestnut barrels. Six years on the lees, no dosage (“Visol” means “only wine”). A rich, complex, concentrated, the absence of sugar made up for by a gently fleshy stone fruit quality and body and structure from the lees ageing. A wonderful, classy, vinous cava.
